La Sala Agricultural Farm is a family-run farm in San Severo, in the Alto Tavoliere delle Puglie. It has worked the same land for over eighty years.
Fourteen hectares, of which 1.4 are planted with olive trees for oil. It is not a number stated out of modesty: it is the exact measure of how much oil exists. About two thousand liters are produced each year, and when they run out, you wait for the next harvest.
How we work
The olives are harvested and pressed within twenty-four hours. We do not have our own oil mill: we rely on a trusted mill, and the time between the tree and the press is something we do not compromise on. An olive that waits is oil that is lost.
The oil then stays in on-farm storage tanks, protected from light and air. The can is filled when the order arrives, not in October for the whole year. This is why what you receive has not been sitting in a warehouse for months.
On the packaging you will find the pressing date printed. It is not a legal requirement: it is the simplest way we know to tell you how old your oil is.
Where we are
The microclimate of the Alto Tavoliere and the soils of this area give the olives characteristics that cannot be obtained elsewhere. There are four cultivars — Peranzana, Santa Caterina, Marina, and Coratina — all harvested in our olive groves. No blends, no oil bought from third parties.
