Our 100% extra virgin olive oil is obtained from olives, in most cases, of the Peranzana variety, a variety present and cultivated mainly in the northern territories of the province of Foggia. The yield of Peranzana is not very high (around 15 liters of oil per quintal) and its oil has a green-yellow color, low acidity, balanced, with a medium harmonic fruity with spicy and bitter notes and herbaceous hints of almond, artichoke and tomato. Finally, the milling takes place a few hours after harvesting in order to guarantee the characteristics of the oil unaltered.
